Cucumber Feta Salad with Zaatar Dressing

- 1 large english cucumber, seeds removed
- ¼ cup crumbled feta cheese
- 1 small shallot, thinly sliced
Dressing
- 1 tablespoon rice vinegar
- 2 tablespoon olive oil
- 1 tablespoon Zaatar seasoning
- 2.5 tablespoon fresh squeezed lemon juice
- 2 finely minced or pressed garlic cloves
- 12/ tablespoon honey
Slice the cucumber in half lengthwise. 2) Scoop out the seeds of the cucumber with a spoon. 3) Slice into thin half moons and add to a mixing bowl. 4) Slice shallot thinly, and add to the bowl. 5) Add all dressing ingredients to a bowl or measuring cup and whisk well. 6) Toss dressing with cucumber and shallot, and top with crumbled feta.
