Easy Air Fryer Roasted Zucchini and Yellow Squash

- 2 medium zucchini
- 1 medium yellow squash
- 2 tablespoon extra virgin olive oil
- ¼ cup grated Parmesan cheese, divided
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Cut squash and zucchini into bite size pieces (I like to do a roll cut- see notes below). 2. Toss the cut squash and zucchini in a large bowl with olive oil, ½ of the parmesan (reserve other half for serving), garlic powder, Italian seasoning, red pepper flakes, and salt and pepper util well coated. 3. Transfer to the air fryer basket in a single layer (a bit of overlap is ok). 4. Air fry at 375 degrees for 10 minutes. 5. Toss basket or gently, or stir with a spatula. 6. Cook 3-4 minutes more at 375 degrees, until tops are golden brown. 7. Remove to a platter or plate, top with remaining parmesan and serve! Roll Cutting the Squash and Zucchini:To roll cut your squash and zucchini, hold your knife at an angle away from your body and cut down on the veggies on a 45 degree angle. Roll your squash a quarter-turn, and continue cutting on the diagonal until all the squash are prepped!
