- 1 30 oz bag frozen shredded hash browns, thawed
- 1 lb uncased breakfast sausage
- 8 large eggs
- 1 cup milk
- 8 oz (2 cups) shredded smoked Gryere cheese
- 4 scallions, thinly sliced
- 1 teaspoon smoked paprika
- 2 teaspoon garlic powder
- ½ teaspoon each salt and pepper (plus more for seasoning potatoes)

Preheat oven to 350 degrees.
Spray baking dish with cooking spray.
In a medium frying pan, cook sausage over medium heat, breaking up as you go, until cooked through 5-7 minutes. Drain off excess fat, and set aside.
Layer thawed potatoes into bottom of the baking dish, and season well with salt and pepper to taste. Toss well to make sure all potatoes are evenly seasoned, and press into an even layer.
Top potatoes with cooked sausage and scallions.
In a large bowl, whisk together eggs, milk, smoked paprika, garlic powder, salt and pepper. Pour egg mixture over sausage, scallion and potatoes.
Top with shredded cheese and bake, uncovered for 55 minutes to 1 hour, until eggs are set and cheese is golden brown.
