- 10 oz burrata cheese
- balsamic glaze, additional basil and olive oil, for serving
Marinated Tomatoes
- 1 lb grape tomatoes or cherry tomatoes
- ¼ cup finely diced red onion
- 2 tablespoon finely chopped fresh basil
- ½ teaspoon coarse sea salt
- ¼ teaspoon fresh ground black pepper
- 2 tablespoon extra virgin olive oil
- 1 clove minced garlic
- 1 tablespoon red wine vinegar
1. Slice the tomatoes in half lengthwise, and add to a large mixing bowl. Add red onion, basil, salt, pepper, olive oil, garlic, and red wine vinegar. Stir well. 2. Marinate tomatoes for at least 3 hours, and up to 24 (if marinating overnight, leave out at room temperature for at least 30 minutes to and hour before plating). 3. Plate tomatoes on a large platter or in a serving bowl. 4. Add burrata to the platter, and gently tear open. 5. Finish the salad with a drizzle of olive oil, some balsamic glaze, a sprinkle of Maldon salt and fresh basil leaves. Serve as is, or with crusty bread.
