- ¼ cup smooth peanut butter
- ½ cup canned unsweetened coconut milk
- fresh squeezed lime juice from one small lime
- ½ teaspoon lime zest (about 1 small lime's worth)
- 1 tablespoon fresh grated ginger
- 1 tablespoon bottled sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon fish sauce
- 1 tablespoon dark soy sauce, low sodium soy sauce, or coconut aminos
- 2 teaspoon unseasoned rice vinegar
- 3 cloves garlic, minced
- 1-2 dashes Maggi seasoning (optional)
Add all ingredients to a small saucepan and cook over medium heat for 3-4 minutes, stirring frequently until warmed through and smooth. 2. Remove from pan to a serving bowl, and garnish with ground peanuts and cilantro, or use as desired (aka for salad dressing or peanut noodles if not using as a dip).
