Healthy Sheet Pan Dinner with Chicken Sausage and Roasted Veggies

Ingredients
12ozsmoked or fully cooked chicken sausage, cut into small rounds
1medium red onion, sliced thinly
2small heads broccoli, cut into small florets (reserve stems for another use)alternatively, use pre-cut fresh broccoli florets)
1medium zucchini, cut into small cubes
8mini fresh sweet peppers, cut into small rounds (seeds removed)
½cup your favorite Italian dressing
salt and fresh ground black pepper, to taste
Instructions
Preheat oven to 425 degrees. 2. Prepare veggies and sausage, and add to a large mixing bowl. 3. Add Italian dressing, and toss to coat. Alternatively, add to a gallon ziplock bag and shake well. 4. Spray a large sheet pan or 2 half sheet pans with cooking spray, 5. Layer veggies and sausage evenly onto the sheet pan(s). 6. Season with salt and fresh ground black pepper. 7. Roast on top rack of oven for 30-35 minutes, until veggies are tender, and broccoli and sausage are well browned.
