1. Heat a small nonstick frying pan over medium low heat, and add slivered almonds. Cook, moving occasionally, until well toasted, 5-7 minutes. Transfer to a plate, and allow to cool completely before adding to salad. 2. Remove tough stems from kale, chop leaves into small pieces, rinse and dry well, and massage with your hands. Transfer to a large mixing bowl. 3. Slice strawberries and scallions, and add to bowl with kale. 4. Make the dressing: Whisk, shake or blend all dressing ingredients together until well combined. 5. Season kale, strawberries, scallions, and almonds with salt and pepper, and toss with dressing. 6. Top with crumbed feta and enjoy! Serves 2-4 (depending on whether its a side or meal)
