Pumpkin Pie Dip (High Protein)

This easy creamy Pumpkin Pie Dip is a tasty and healthy snack option that's both delicious and high in protein, thanks to tangy cottage cheese!

Equipment

  • Food processor or blender

Ingredients

  • 1 15.5 oz can pumpkin puree (not pumpkin pie filling)
  • 1 16 oz container cottage cheese (full fat preferred)
  • 1 teaspoon pure vanilla extract
  • ½ cup amber maple syrup, plus more for drizzling 
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 2 tablespoon heavy whipping cream (optional) 
  • 2 tablespoon chopped walnuts, for topping (optional)

Instructions

  • Add all ingredients to a food processor (or blender) and blend until smooth on high power, scraping down the sides as needed with a silicone spatula (about 1 minute).
    2. Top with chopped walnuts (or topping of choice), and drizzle with additional maple syrup, if desired.

Notes

Instead of walnuts, you could also top the dip with chopped pecans, coconut flakes, whipped cream, or mini chocolate chips! 
If you like, you can sweeten the dip with Monkfruit, Stevia, or Honey- just be sure to add to taste and adjust as needed.
