- 4 large eggs
- ½ teaspoon Aleppo pepper (plus more for serving)
- 3 tablespoon grated Parmesan cheese (plus more for serving)
- 2 tablespoon butter
- 1 scallion, thinly sliced
- 2 heaping cups fresh spinach leaves
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 cloves garlic, minced
Whisk together eggs, Aleppo pepper, and parmesan in a small bowl. 2. Add butter to a nonstick skillet over medium heat, and melt. 3. Add scallion, and cook until softened, stirring occasionally, 2-3 minutes. 4. Add spinach season with salt and pepper, and cook until wilted, 2-3 minutes. S 5. Add garlic and cook until liquid is mostly evaporated from spinach, 1-2 minutes. 6. Pour the whisked egg mixture into the pan. 7. Cook, stirring occasionally, until eggs are set to desired doneness 2-3 minutes. 8. Remove from heat, and top with an additional sprinkle of aleppo pepper and parmesan. Enjoy!
