Make the whipped goat cheese. Add goat cheese, olive oil and salt and pepper to the bowl of a food processor with the blade in place. Process until smooth and well combined. 2. To make the dressing, whisk vinaigrette ingredients thoroughly, or add to a mason jar and seal and shake well. 3. Assembling the salad. Spread half of the goat cheese on a large platter or plate, in the corners. Layer the watermelon, cucumber and shallots in the center, top with avocado cubes and small spoonfuls of whipped goat cheese, and drizzle with lime vinaigrette. Sprinkle salt and pepper lightly over top. 4. Garnish salad with fresh basil or mint, if desired. Serve immediately.
