Whipped Blue Cheese Crostini with Apple and Prosciutto

Ingredients

  • ½ artisanal bread loaf (about 6 medium slices or 12 if small/baguette sized)*
  • 1 ½ tablespoon olive oil
  • salt and fresh ground pepper, to taste 
  • 1 small Granny Smith apple,  thinly sliced 
  • 4 oz thinly sliced prosciutto  

Whipped Blue Cheese Spread

  • ¾ cup blue cheese crumbles, plus more for sprinkling
  • 4 oz cream cheese, softened 
  • ½ tablespoon olive oil

Honey Dijon Drizzle 

  • 1 tablespoon honey
  • ¼ tablespoon country style dijon or stone ground mustard
  • ¼ tablespoon apple cider vinegar

Instructions

  • Preheat oven to 400.
    2. Lay bread on a foil-lined baking sheet.
    3. Brush each slice of bread on one side with olive oil to coat.
    4. Season each coated slice with salt and fresh ground pepper
    5. Bake the sliced bread for 10-15 minutes, or until golden and crisp.
    6. For extra golden color and crisp texture, place bread under your oven’s broiler for 1- 2 minutes after it bakes.
    7. While the bread is crisping in the oven, make the whipped blue cheese and honey dijon drizzle. Add the blue cheese crumbles, softened cream cheese, and olive oil to a food processor, and pulse until smooth and combined, scraping down sides with a spatula or spoon as necessary. Set cheese mixture aside. In a separate bowl, whisk together the honey, dijon and apple cider vinegar.
    8. Once bread is toasted, spread blue cheese mixture evenly on each toast.
    9. Top with thinly sliced apple and prosciutto, then drizzle with honey dijon sauce and sprinkle on a layer of additional blue cheese crumbles and serve!
