Ingredients
This easy Sloppy Joe Casserole Recipe combines delicious HOMEMADE Sloppy Joe with buttery crescent rolls and melty cheese for the ultimate comfort food meal. Here's what you'll need to make it:
- Homemade Sloppy Joe. This recipe goes back generations in my family, and is one of the most popular recipes on the site, all for good reason: it's DELICIOUS! This quick and easy homemade Sloppy Joe is ready in a flash, with super simple ingredients. Put down the can, and make it from scratch, you won't be sorry! This simple recipe calls for one lb lean ground beef, bell pepper, a half a cup ketchup, and a few other mix-ins. It was my all time favorite growing up! All it takes is a few minutes of prep, then you'll cook pepeprs and onions, brown ground beef, and stir the easy sauce ingredients right into a 10-inch skillet, or large skillet.
- A couple cans of crescent roll dough (I love Pillsbury kitchens). One will serve as the base (bottom crust) for the casserole, while the other you'll cut into strips to form the pretty lattice top right before baking!
- Sliced medium cheddar cheese. This will go under the Sloppy Joe mixture to help form a moisture barrier for the crust, and keep the final casserole from getting too soggy.
- Shredded sharp cheddar cheese, for topping the Sloppy Joe layer. Double cheese = doubly delicious! For best results, grate your own!
- Melted butter, for brushing the top lattice crescent roll topping, so it's extra crisp and delicious.
- Grated parmesan cheese, for sprinkling over top the buttery crust just before baking.
- Thinly sliced scallions (for garnish). Optional, but recommended.

How to make the Homemade Sloppy Joe Casserole Recipe with Crescent Rolls
This easy twist on classic Sloppy Joes is a delicious way to enjoy a classic comfort food, in the form of a cheesy, crispy casserole! Here's how to make it:
- Prepare the Sloppy Joe recipe, and set aside.
- Preheat oven to 375°F. Lightly spray an 9”x13” baking dish with cooking spray, or grease with butter.
- Open one pack of crescent rolls, and leave them in rectangular shape. (There should be 2 rectangles).
- Lay the 2 rectangles in the bottom of the prepared baking dish, side by side. Gently spread out with your fingers to fit the bottom of the pan, pressing any edges to seal into one solid piece with no gaps for the bottom layer.
- Layer the slices of cheddar cheese over top the first crescent roll layer, overlapping as necessary, leaving a ½” gap around the outer edge. (The bottom cheese layer helps keep the crescent rolls from getting soggy from the Sloppy Joe while baking).
- Next add the Sloppy Joe mixture on top of the cheese layer, (spread the meat mixture to coat) then cover evenly with the shredded sharp cheddar.
- Open the second pack of crescent rolls, and lay flat in 2 rectangles. Slice into thin lengthwise strips to form a lattice pattern on top (stitch to fit as needed). Layer long strips vertically over top of the cheese, then layer strips on an angle, cutting as necessary to fit, over top to form a lattice pattern. Use leftover dough strips to make a border/frame around the outer edge of the casserole, and press to seal.
- Lightly brush the melted butter over the top crescent roll layer (top of the dough), then sprinkle parmesan cheese over top.
- Bake for 30-35 minutes or until golden brown.
- Garnish with thinly sliced scallions, cut into squares, and serve! (see recipe card below for full instructions and ingredients list).
