Ingredients
This flavorful meatloaf comes together easily in a loaf pan or meatloaf pan, with simple ingredients. Here's what you'll need to make it:
- ½ sleeve saltine crackers, pulsed to crumbs in food processor (or ½ cup plain breadcrumbs). Skip panko (too airy/crunchy) and seasoned bread crumbs. There's plenty of flavor in the seasonings, so opt for plain bread crumbs or crackers for this recipe.
- A bit of milk (use what you drink).
- One egg, to help bind everything together.
- One envelope of Lipton onion soup mix. You can use any store brand dry onion soup mix as well!
- A couple scallions, thinly sliced. These add a bit of fresh flavor to the meatloaf, and cook easily into the mixture in the oven, since they are thinly sliced.
- A pound of ground beef. I like to use an 80/20 blend for a super moist meatloaf, but you can use leaner blends as well.
- Worcestershire sauce, for an umami boost of flavor that enhances the French onion soup flavor of the Lipton packet. I prefer Lea and Perrins brand Worcestershire sauce.
- A bit of ketchup, for that classic meatloaf flavor. You'll use this in the glaze as well.
- Freshly ground black pepper. I do not add salt to this recipe, as the Lipton packet and Worcestershire sauce provide plenty of salt to the recipe.

Meatloaf glaze
This classic recipe comes complete with a simple, 3 ingredient tangy, sweet, and thick glaze. Here's what you'll need:
- Ketchup, as the base of the glaze.
- Dark brown sugar, for a touch of sweetness and caramelization.
- Dijon mustard.

Serving the Glazed Onion Soup Meatloaf
To keep meatloaf intact when slicing, let the meatloaf rest for at least 15 minutes. Allowing the meatloaf to rest gives the juices time to redistribute, and gives you clean, not crumbly slices.

Recipe Substitutions
This meatloaf recipe can easily be adjusted to your tastes, and what you have on hand. Here are some great swaps and additions you can use to make this recipe your own:
- Meat. Swap the ground beef for ground turkey for a lighter meatloaf.
- Binder. Try panko breadcrumbs or gluten free breadcrumbs in place of the saltine crackers.
- Onion. Substitute ¼ cup diced onion, or one small diced shallot for the scallions.
- Glaze. Use honey in place of brown sugar for a similar mild sweetness, or use yellow mustard in place of dijon mustard.
Baking Tip: No loaf pan? No problem! Simply form the meatloaf mixture into a loaf shape in a greased baking dish.
Storing and Reheating Leftovers
Storing. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating. Reheat slices covered with foil in a 350 degree oven so they stay moist, and the glaze doesn't dry out.

Lipton Onion Soup Meatloaf Recipe
Equipment
- 8 ½" x 4 ½" loaf pan
Ingredients
- ½ sleeve saltine crackers, pulsed to crumbs in food processor , (or ½ cup plain breadcrumbs)
- ¼ cup milk (use what you drink)
- 1 large egg
- 1 envelope of onion soup mix, such as Lipton
- 2 scallions (or green onions), thinly sliced
- 1 lb ground beef (I use 80/20)
- 1 tbsp Worcestershire sauce
- 2 tablespoon ketchup
- ¼ teaspoon freshly ground black pepper
Glaze
- ¼ cup ketchup
- 1 tablespoon dark brown sugar
- 1 teaspoon dijon mustard or yellow mustard
Instructions
- Preheat oven to 350 degrees f. 2. Pulse crackers in a food processor until fine crumbs form. Alternatively, you can crush them in a zip top bag with a rolling pin, or substitute ½ cup plain breadcrumbs. 3. Whisk egg in a large mixing bowl, and add cracker crumbs, onion soup packet, and milk. Let stand for 5 minutes. 4. Add sliced scallions, Worcestershire sauce, ketchup, and pepper to the bowl. Add beef, breaking up into smaller pieces to make it easier to incorporate into the mixture. 5. Combine with your hands until meatloaf just comes together, being careful not to overwork the meat. 6. Transfer meat mixture to a greased 8 ½” x 4 ½” loaf pan. (Grease pan with cooking spray, oil or butter). 7. Whisk together glaze ingredients, and coat the meatloaf, using a spoon or silicone brush. 8. Bake the meatloaf in greased loaf pan for 30-45 minutes in preheated oven, or until internal temperature in center reaches 165 with a meat thermometer. 9. Let the meatloaf rest at least 15 minutes before removing from the pan, slicing and serving.
