Bacon Avocado Toast

This quick and easy Avocado Toast with Bacon, Feta cheese & Balsamic Drizzle is as luxurious as it is simple, and comes together in a flash for a lighter breakfast that still satisfies.

Ingredients

  • 4 strips bacon, cooked and chopped
  • 1 medium/large ripe avocado
  • 2 tablespoon feta cheese, crumbled
  • 2 scallions, sliced
  • 2 slices bread, toasted
  • bottled balsamic glaze, for finishing
  • salt, pepper, and garlic powder to taste

Instructions

  • Cook your bacon the way you normally would. I prefer to cook mine on the stovetop, starting by laying the bacon in a cold nonstick frying pan, and frying over low heat- flipping frequently with tongs until just crisp, then draining on paper towel.
  • While your bacon cooks, toast 2 slices of sourdough bread and set on serving plates. You can either butter them and toast in a pan, or use the toaster.
  • Open your avocado, remove the skin and pit, and place on a cutting board. Sprinkle with salt, pepper and garlic powder. Mash with a fork. Thinly slice white and green parts of scallions.
  • Once bacon is cooked and cooled slightly, chop it into small bite size pieces.
  • Spread out the mashed and seasoned avocado evenly onto 2 slices of toasted bread.
  • Top each avocado toast equally with the chopped bacon, scallions, and feta crumbles. Drizzle the top of each toast with balsamic glaze and enjoy!
