Bacon Avocado Toast

- 4 strips bacon, cooked and chopped
- 1 medium/large ripe avocado
- 2 tablespoon feta cheese, crumbled
- 2 scallions, sliced
- 2 slices bread, toasted
- bottled balsamic glaze, for finishing
- salt, pepper, and garlic powder to taste
Cook your bacon the way you normally would. I prefer to cook mine on the stovetop, starting by laying the bacon in a cold nonstick frying pan, and frying over low heat- flipping frequently with tongs until just crisp, then draining on paper towel. 2. While your bacon cooks, toast 2 slices of sourdough bread and set on serving plates. You can either butter them and toast in a pan, or use the toaster.3. Open your avocado, remove the skin and pit, and place on a cutting board. Sprinkle with salt, pepper and garlic powder. Mash with a fork. Thinly slice white and green parts of scallions. 4. Once bacon is cooked and cooled slightly, chop it into small bite size pieces. 5. Spread out the mashed and seasoned avocado evenly onto 2 slices of toasted bread. 6. Top each avocado toast equally with the chopped bacon, scallions, and feta crumbles. Drizzle the top of each toast with balsamic glaze and enjoy!
