This quick and easy Avocado Toast with Bacon, Feta & Balsamic Drizzle is as luxurious as it is simple, and comes together in a flash for a lighter breakfast that still satisfies.

As basic as it may be, my in-house Gordon Ramsay of a boyfriend and I LOVE avocado toast. You won’t catch us at the next Coachella or anything, but we definitely jumped on the avocado toast bandwagon HARD. I love avocados on pretty much anything, but I especially love them on toast. 1- because they’re delicious, and 2- because it’s soooo easy.

I’ve experimented with a lot of different toppings or avocado toast over the years, but this combo of avocado with bacon, feta and sunflower seeds has proved to be our go-to variation of the toast. The creamy avocados are balanced by smoky bacon, salty and tart feta, nutty sunflower seeds, the bite of the scallion, and last but not least, the sweet/tangy hit of balsamic glaze (I love Roland). It’s also great (dare I say it) without the bacon, or with the addition of a poached or fried egg.

Could I leave the bacon off the avocado toast?

Absolutely. This toast is a trip to flavor country (sorry I love Guy Fieri references) with or without the bacon.

Could I sub out the sunflower seeds?

Yes! I also really love chopped pistachios on this toast.

  • 4 strips bacon, cooked and chopped
  • 1 avocado, sliced thinly
  • 2 tbsp feta cheese, crumbled*
  • 1 tsp shelled sunflower seeds*
  • 2 scallions, sliced
  • 2 slices sourdough bread, toasted
  • balsamic glaze, for finishing


  • Cook your bacon the way you normally would. I prefer to cook mine on the stovetop, starting by laying the bacon in a cold nonstick frying pan, and frying over low heat- flipping frequently with tongs until just crisp, then draining on paper towel.
    2. While your bacon cooks, toast 2 slices of sourdough bread and set on serving plates.
    3. Prep your produce: slice 1 avocado in half, and slice each half horizontally into thin slices. Thinly slice white and green parts of scallions.
    4. Once bacon is cooked and cooled slightly, chop it into small bite size pieces.
    5. Fan out the sliced halves of avocado onto the sourdough bread (1 half for each slice of bread).
    6. Top each avocado toast equally with the chopped bacon, scallions, feta and sunflower seeds. Drizzle the top of each toast with balsamic glaze and enjoy!

Crumbled goat cheese also works well here.
Sunflower seeds could be replaced with chopped pistachios.
