Easy and flavorful Bacon Avocado Toast
I’ve experimented with a lot of different toppings or avocado toast over the years, but this combo of avocado with bacon, feta and sunflower seeds has proved to be my go-to variation of the toast.
The creamy avocados are balanced by smoky bacon, salty and tart feta, the bite of the scallion, and last but not least, the sweet/tangy hit of balsamic glaze (I love Roland). It’s also great (dare I say it) without the bacon, or with the addition of a poached or fried egg.
Avocado Toast Ingredients
To make this easy and delicious Bacon Avocado Toast, you will need:
- 4 strips bacon, cooked and chopped. I like to cook mine in a pan, but use any cooking method you like, or use fully cooked bacon.
- 1 medium/large ripe avocado.
- 2 tbsp feta cheese, crumbled. I love the feta packed in brine, but any crumbled feta will work.
- 2 scallions, sliced thinly. I love the pop of flavor these add to the toast.
- 2 slices bread, toasted. You want to use a sturdy bread, such as sourdough, Italian or multi-grain. I also love this recipe with marble Rye bread.
- Bottled balsamic glaze, for finishing.
- Salt, pepper, and garlic powder to taste. Season the avocado right on the cutting board, and mash with a fork for less mess!
How to make Bacon Avocado Toast
1. Cook your bacon the way you normally would. I prefer to cook mine on the stovetop, starting by laying the bacon in a cold nonstick frying pan, and frying over low heat- flipping frequently with tongs until just crisp, then draining on paper towel.
2. While your bacon cooks, toast 2 slices of sourdough bread and set on serving plates. You can either butter them and toast in a pan, or use the toaster.
3. Open your avocado, remove the skin and pit, and place on a cutting board. Sprinkle with salt, pepper and garlic powder. Mash with a fork. Thinly slice white and green parts of scallions.
4. Once bacon is cooked and cooled slightly, chop it into small bite size pieces.
5. Spread out the mashed and seasoned avocado evenly onto 2 slices of toasted bread.
6. Top each avocado toast equally with the chopped bacon, scallions, and feta crumbles. Drizzle the top of each toast with balsamic glaze and enjoy!
Tips for picture perfect Avocado Toast
- Use a fork to spread the mashed and seasoned avocado onto your toast, and use a crosshatch pattern to give it texture.
- Spread a bit of butter on your bread on both sides, and toast in a pan on the stove for an ultra-crunchy toast. In a hurry? The toaster is fine!
- Layer the bacon, feta and scallions lightly around the toast, so you can see all the layers of flavor.
- Drizzle the balsamic from a bit higher than your plate for a light and natural look.
