Bacon Avocado Toast Recipe
Ingredients
- 4 strips bacon, cooked and chopped
- 1 medium/large ripe avocado
- 2 tablespoon feta cheese, crumbled
- 2 scallions, sliced
- 2 slices bread, toasted
- bottled balsamic glaze, for finishing
- salt, pepper, and garlic powder to taste
- sunflower seeds for garnish , optional
Instructions
- Cook your bacon the way you normally would. I prefer to cook mine on the stovetop, starting by laying the bacon in a cold nonstick frying pan, and frying over low heat- flipping frequently with tongs until just crisp, then draining on paper towel.
- While your bacon cooks, toast 2 slices of sourdough bread and set on serving plates. You can either butter them and toast in a pan, or use the toaster.
- Open your avocado, remove the skin and pit, and place on a cutting board. Sprinkle with salt, pepper and garlic powder. Mash with a fork. Thinly slice white and green parts of scallions.
- Once bacon is cooked and cooled slightly, chop it into small bite size pieces.
- Spread out the mashed and seasoned avocado evenly onto 2 slices of toasted bread.
- Top each avocado toast equally with the chopped bacon, scallions, and feta crumbles. Drizzle the top of each toast with balsamic glaze and enjoy!
