- 4 oz fennel simple syrup (recipe below)
- 4 oz silver tequila
- ⅓ cup unsweetened cranberry juice
- the juice of 2 limes
Fennel Simple Syrup
- ½ tablespoon fennel seeds
- 1 cup water
- 1 cup cane sugar or granulated sugar
Make the fennel simple syrup:
Add the fennel seeds, sugar and water to a small saucepan. Bring to a boil, then reduce heat to medium and simmer for 5 minutes, stirring occasionally until sugar is fully dissolved.
Once sugar is dissolved and syrup is slightly thickened, turn off heat and allow to cool to room temperature. Strain into a jar or airtight container and store in the refrigerator until ready to use. Makes about 1.5 cups, and keeps up to 2 weeks in refrigerator.
Make the cocktails:
Add all ingredients to a cocktail shaker or mason jar and shake well.
Pour over 2 cocktail glasses filled with ice.
Garnish drinks with fennel and fresh cranberries.
