Ingredients

Mojo Meatballs

  • 1 lb ground pork
  • ½ cup Panko breadcrumbs
  • 1 large egg
  • 1 cup (packed) cilantro (tender stems and leaves) finely chopped
  • 4 cloves garlic, minced or pressed
  • 2 teaspoon Kosher salt
  • 1 teaspoon ground cumin
  • 1 jalapeno or serrano pepper, finely minced (seeds and stems removed)
  • 2 teaspoon granulated sugar

Mojo Sauce

  • 2 cups (packed) cilantro (tender stems and leaves)
  • ½ cup flat leaf parsley
  • 6 cloves garlic, peeled
  • the zest of ½ an orange
  • ¼ cup fresh squeezed orange juice (about 1 naval orange)
  • the zest of 1 lime
  • 2 tablespoon fresh squeezed lime juice
  • 1 teaspoon granulated sugar
  • 1 tsp ground cumin
  • 1 teaspoon dried oregano
  • 1 jalapeno or serrano pepper, finely minced (seeds and stems removed)
  • 3 tablespoon extra virgin olive oil

Instructions

  • Preheat oven to 425 degrees f.
  • Mix together meatball ingredients with your hands until just combined.
  • Form into 2” balls with your hands or a cookie or ice cream scoop, and transfer to a parchment lined baking sheet.
  • Bake for 13-15 minutes on top rack of oven.
  • While the meatballs bake, add Mojo sauce ingredients to the bowl of a food processor (or a blender), and pulse until smooth. Transfer to a small bowl for serving.
  • Once baked, serve meatballs with Mojo sauce and white rice.
