Cuban Pork Mojo Meatballs with Citrus Mojo Sauce Recipe

Mojo Meatballs
- 1 lb ground pork
- ½ cup Panko breadcrumbs
- 1 large egg
- 1 cup (packed) cilantro (tender stems and leaves) finely chopped
- 4 cloves garlic, minced or pressed
- 2 teaspoon Kosher salt
- 1 teaspoon ground cumin
- 1 jalapeno or serrano pepper, finely minced (seeds and stems removed)
- 2 teaspoon granulated sugar
Mojo Sauce
- 2 cups (packed) cilantro (tender stems and leaves)
- ½ cup flat leaf parsley
- 6 cloves garlic, peeled
- the zest of ½ an orange
- ¼ cup fresh squeezed orange juice (about 1 naval orange)
- the zest of 1 lime
- 2 tablespoon fresh squeezed lime juice
- 1 teaspoon granulated sugar
- 1 tsp ground cumin
- 1 teaspoon dried oregano
- 1 jalapeno or serrano pepper, finely minced (seeds and stems removed)
- 3 tablespoon extra virgin olive oil
Preheat oven to 425 degrees f.2. Mix together meatball ingredients with your hands until just combined.3. Form into 2” balls with your hands or a cookie or ice cream scoop, and transfer to a parchment lined baking sheet.4. Bake for 13-15 minutes on top rack of oven.5. While the meatballs bake, add Mojo sauce ingredients to the bowl of a food processor (or a blender), and pulse until smooth. Transfer to a small bowl for serving.
