Whisk together BBQ mayo ingredients in a small bowl, and set aside or refrigerate until ready to use. 2. Whisk together slaw dressing, and toss with broccoli slaw mix/ coleslaw mix. Set aside or refrigerate until ready to use.Assembly and Baking: 1. Cut rolls in half, separating tops and bottoms. Place on a cookie sheet, and place under oven’s broiler on high for 1-3 minutes, until lightly toasted. 2. Preheat oven to 350 degrees. 3. Place bottom buns in a large ceramic baking dish or on a parchment lined sheet pan. 4. Spread and even layer of BBQ mayo on bottom buns. 5. Add pork in even layer, using a slotted spoon, and leaving behind excess liquid. 6. Top with even layer of sliced pepper jack cheese (it will overlap some). 7. Top with top buns. 8. Melt butter (I do about 30 seconds in the microwave), and whisk in minced garlic. 9. Brush garlic butter mixture evenly over top buns, and sprinkle tops with sesame seeds and poppy seeds. 10. Bake for 15-20 minutes, until golden and cheese is melted. 11. Once baked, add coleslaw, if desired.
