- 2 chorizo sausage links (about 3 oz)
- 4 large or jumbo eggs, beaten
- ⅓ cup grated cheddar cheese
- 4 scallions, thinly sliced
- 1 avocado, cubed
- fresh cilantro leaves and hot sauce, for serving
- 10 corn tortillas, charred
