Pimento Cheeseburger with Bacon

- 1 lb 80/20 ground beef
- 1 large tomato, cut into 4 slices
- 4 brioche hamburger buns, cut side toasted
- 1 cup horseradish pimento cheese spread (recipe link below)
- pickled jalapeño slices, for topping
- 10 strips cooked bacon
On the grill:
To make the burgers on a grill, heat the grill to medium-high and allow it to get nice and hot.
When using my gas grill, I like to let it heat up for about 10 minutes with the lid down so the grates are super hot. This way, you get a great sear.
Once the grill is ready, season the burger patties with salt and pepper on both sides.
Cook 4-6 minutes a side, until desired doneness is achieved.
Right after you flip the burger, add ¼ cup of the pimento cheese to the top of each burger.
Cook with the lid down to let it get nice and melty.
On a flat top grill, or in a cast iron skillet
To cook the burgers on a flat top grill or in a skillet, you want to heat the the flat top or skillet to medium high. Let it warm up for about 5 minutes.
Once it's nice and hot, add a bit of neutral oil, such as avocado oil or canola.
Season the burgers on both sides with salt and pepper.
Cook 4-6 minutes a side, until desired doneness is achieved. Right after you flip the burgers, add ¼ cup of the pimento cheese to the top of the burger.
For the last few minutes of cooking, add a lid or dome basting cover to get the cheese spread nice and melted.

To toast the bun, you can place it cut side down on the grill for a minute or Do the same in your skillet or on your flat top. This step can be done in the last few minutes of burger cook time, or prior to cooking the burgers.
To your toasted buns, layer on 2 strips of crisp cooked bacon, then add the cheesy burger. Finish the burger with a slice of tomato, and pickled jalapeños.
