- 1 1-2 lb boneless pork loin
- 1 tablespoon olive oil
- 1 tbsp brown sugar
- 1 teaspoon smoked paprika
- ½ teaspoon each salt and pepper
- 1 teaspoon garlic powder
- 4 oz thinly sliced prosciutto
1. Rub pork loin generously with olive oil. 2. Mix together brown sugar, smoked paprika, salt, pepper and garlic powder in a small bowl with a fork until well combined. 3. Coat pork in spice rub and wrap with slices of prosciutto, starting at one end and overlapping as necessary until pork loin is covered, Tuck prosciutto underneath, and place pork loin prosciutto seam side down into the air fryer basket. 4. Cook at 380 degrees for 25-30 minutes, flipping halfway through. Pork should register 160 degrees when ready. The larger the pork loin, the longer the cook time. 5. Once pork is fully cooked, remove from air fryer and allow to rest for 5-10 minutes on a board or plate before slicing.
