- 12 oz smoked or fully cooked chicken sausage, cut into small rounds
- 1 medium red onion, sliced thinly
- 2 small heads broccoli, cut into small florets (reserve stems for another use) alternatively, use pre-cut fresh broccoli florets)
- 1 medium zucchini, cut into small cubes
- 8 mini fresh sweet peppers, cut into small rounds (seeds removed)
- ½ cup your favorite Italian dressing
- salt and fresh ground black pepper, to taste
Preheat oven to 425 degrees. 2. Prepare veggies and sausage, and add to a large mixing bowl. 3. Add Italian dressing, and toss to coat. Alternatively, add to a gallon ziplock bag and shake well. 4. Spray a large sheet pan or 2 half sheet pans with cooking spray, 5. Layer veggies and sausage evenly onto the sheet pan(s). 6. Season with salt and fresh ground black pepper. 7. Roast on top rack of oven for 30-35 minutes, until veggies are tender, and broccoli and sausage are well browned.
