Sloppy Joe Crescent Casserole Recipe

Equipment

  • 9"x13" casserole dish
  • cooking spray (or additional butter) for greasing dish

Ingredients

  • 1 lb Homemade Sloppy Joe (recipe linked below)
  • 2 8 oz cans crescent roll dough (such as Pillsbury)
  • 6 slices Medium Cheddar Cheese
  • 1 cup shredded sharp cheddar cheese 
  • 2 tablespoon butter, melted
  • 2 tablespoon grated parmesan cheese 
  • thinly sliced scallions (for garnish-optional)

Instructions

  • 1 Prepare the Sloppy Joes recipe, and set aside. 
    2 Preheat oven to 375°F. Lightly spray an 9”x13” baking dish with cooking spray, or grease with butter.
    3 Open one pack of crescent rolls, and leave them in rectangular shape. (There should be 2 rectangles). 
    4 Lay the 2 rectangles in the bottom of the baking dish, side by side. Gently spread out with your fingers to fit the bottom of the pan, pressing any edges to seal into one solid piece with no gaps.
    5 Layer the slices of cheddar cheese over top the first crescent roll layer, overlapping as necessary, leaving a ½” gap around the outer edge. (The bottom cheese layer helps keep the crescent rolls from getting soggy from the Sloppy Joe while baking).
    6 Next add the Sloppy Joe mixture on top of the cheese layer, then cover evenly with the shredded sharp cheddar. 
    7 Open the second pack of crescent rolls, and lay flat in 2 rectangles. Slice into thin lengthwise strips to form a lattice pattern on top (stitch to fit as needed). Layer long strips vertically over top of the cheese, then layer strips on an angle, cutting as necessary to fit, over top to form a lattice pattern. Use leftover dough strips to make a border/frame around the outer edge of the casserole, and press to seal. 
    8 Lightly brush the melted butter over the top crescent roll layer, then sprinkle parmesan cheese over top.
    9 Bake for 30-35 minutes or until golden brown.
    10 Garnish with thinly sliced scallions.(if desired), cut into squares, and serve!
