Souperior Easy Lipton Onion Soup Meatloaf Recipe

This quick, easy, and moist Glazed French Onion Meatloaf is a fun twist on the original Lipton Onion Soup Meatloaf recipe, with a tangy glaze and loads of onion flavor!

Equipment

  • 8 ½" x 4 ½" loaf pan

Ingredients

  • ½ sleeve saltine crackers, pulsed to crumbs in food processor (or ½ cup plain breadcrumbs) 
  • ¼ cup milk (use what you drink)
  • 1 large egg
  • 1 envelope of onion soup mix, such as Lipton
  • 2 scallions (or green onions), thinly sliced
  • 1 lb ground beef (I use 80/20)
  • 1 tbsp Worcestershire sauce
  • 2 tablespoon ketchup
  • ¼ teaspoon freshly ground black pepper 

Glaze

  • ¼ cup ketchup
  • 1 tablespoon dark brown sugar 
  • 1 teaspoon dijon mustard or yellow mustard

Instructions

  • Preheat oven to 350 degrees f.
    2. Pulse crackers in a food processor until fine crumbs form. Alternatively, you can crush them in a zip top bag with a rolling pin, or substitute ½ cup plain breadcrumbs.
    3. Whisk egg in a large mixing bowl, and add cracker crumbs, onion soup packet, and milk. Let stand for 5 minutes.
    4. Add sliced scallions, Worcestershire sauce, ketchup, and pepper to the bowl. Add beef, breaking up into smaller pieces to make it easier to incorporate into the mixture.
    5. Combine with your hands until meatloaf just comes together, being careful not to overwork the meat.
    6. Transfer meat mixture to a greased 8 ½” x 4 ½” loaf pan. (Grease pan with cooking spray, oil or butter).
    7. Whisk together glaze ingredients, and coat the meatloaf, using a spoon or silicone brush.
    8. Bake the meatloaf in greased loaf pan for 30-45 minutes in preheated oven, or until internal temperature in center reaches 165 with a meat thermometer.
    9. Let the meatloaf rest at least 15 minutes before removing from the pan, slicing and serving.
