Equipment

Ingredients

  • 4 cups watermelon balls, cut with melon baller*
  • 1 cup thinly sliced seedless cucumber*
  • 1 medium ripe avocado, cubed
  • 1 small shallot, thinly sliced 
  • optional: fresh basil or mint, for garnish

Whipped Goat Cheese 

  • 4 oz honey flavored goat cheese*
  • 2 tablespoon olive oil 
  • Salt and fresh ground black pepper to taste 

Honey Lime Vinaigrette 

  • the juice of 1 lime 
  • 3 tablespoon olive oil 
  • 2 tablespoon honey

Instructions

  • Make the whipped goat cheese. Add goat cheese, olive oil and salt and pepper to the bowl of a food processor with the blade in place. Process until smooth and well combined.
    2. To make the dressing, whisk vinaigrette ingredients thoroughly, or add to a mason jar and seal and shake well.
    3. Assembling the salad. Spread half of the goat cheese on a large platter or plate, in the corners. Layer the watermelon, cucumber and shallots in the center, top with avocado cubes and small spoonfuls of whipped goat cheese, and drizzle with lime vinaigrette. Sprinkle salt and pepper lightly over top.
    4. Garnish salad with fresh basil or mint, if desired. Serve immediately.

Notes

Alternatively, if you do not have a food processor, you could whisk the goat cheese and olive oil vigorously until well combined. You could also use an immersion blender to whip them together.
If you do not have a melon baller, you could also cut the watermelon into small cubes for this salad.
I like to use seedless cucumber for this, but use whatever you like.
Plain goat cheese would also work.
