Easy, smoky and delicious Buffalo Chicken Sliders
Like buffalo chicken dip in tiny sandwich form, these game day favorites are a real crowd pleaser. Loaded with smoked mozzarella, crumbled blue cheese, tangy buffalo chicken, and topped with hot-sauce-buttered buns, these sliders are the MVP of any football related party. Or any party, for that matter.
Best of all? These easy Buffalo Chicken Sliders are ready in just about 30 minutes, and are super easy to make with rotisserie chicken! Less work for the win!
Buffalo Chicken Sliders- Ingredients
Assembly
- 4 oz smoked mozzarella cheese, shredded. I love the added smokiness this cheese adds to the sliders.
- A 12 count package Hawaiian slider rolls. These will be briefly toasted under the broiler before assembling the sandwiches for extra texture!
- 4 oz crumbled blue cheese. This adds that quintessential buffalo wing flavor.
- 1 tsp white sesame seeds (for topping buns). These add a bit of texture, but are mostly for presentation.
Buffalo Chicken
- 2 cups cooked chicken, shredded. You can you leftovers, or a rotisserie chicken for these sliders.
- ⅓ cup Blue cheese dressing, such as Ken's.
- ¼ cup hot sauce (such as Frank’s Red Hot).
- 1 tsp smoked paprika.
Hot Sauce Butter (for rolls)
- 3 tbsp salted butter, melted.
- 1 tbsp hot sauce (such as Frank’s Red Hot).
Making the Baked Buffalo Chicken Sliders
- Cut rolls in half, separating tops and bottoms. Place on a cookie sheet, and place under oven’s broiler on high for 1-3 minutes, until lightly toasted. Transfer to parchment lined sheet, and set aside. Preheat oven to 350 degrees.
- In a large mixing bowl, combine cooked shredded chicken, blue cheese dressing, hot sauce and smoked paprika. Stir well to combine.
- Layer shredded smoked mozzarella cheese evenly on the bottom layer of the toasted buns.
- Cover mozzarella with chicken mixture.
- Top evenly with blue cheese crumbles.
- Place top buns on.
- Melt butter, and whisk in hot sauce to make Hot Sauce Butter.
- Using a silicone brush, brush hot sauce butter all over the top buns and sprinkle with sesame seeds.
- Bake in preheated oven on parchment lined sheet for 15-20 minutes, until just toasty and cheese is melted.
Serving the sliders
After letting the Buffalo Chicken Sliders rest briefly after baking, slice them into individual sliders and serve warm. You can serve them as-is, or serve them with a side of blue cheese and/or Ranch dressing, and some celery sticks.
Make ahead
You can prep these sliders ahead! If you want to prep these sliders for a party in advance, you can assemble them, then tightly wrap and refrigerate until ready to bake. Just set them out for about 10-15 minutes while the oven preheats, and uncover before baking on a parchment lined sheet.
Storing and reheating
You can store leftovers (if you have any) tightly wrapped in foil or plastic wrap in the refrigerator for up to 3 days. To reheat, place on a microwave safe plate and cover with a moistened paper towel. Heat on high for 1-2 minutes until warmed through.
Substitutions and Additions
Here are some easy swaps and add-ins for working with what you have and your tastes:
- Not a fan of Blue Cheese Dressing? Try using your favorite ranch dressing instead!
- Want some crunch/veggies? Add some thinly sliced green onions to the buffalo chicken mixture, or serve your sliders with celery sticks and carrots!
- Not into mozzarella? Use some shredded cheddar cheese on the bottom half instead!
- Don't have Hawaiian sweet rolls? Try any store bought slider rolls!
