This Bacon, Scallion Fried Egg and Cheese Breakfast Sandwich has all the necessary ingredients for a great morning!
With plenty of peppery, crispy bacon, gooey cheese, gently fried eggs infused with fresh scallion flavor, buttery Challah rolls and a tangy garlic mayo spread, this sandwich has got you when you're craving a super satisfying classic breakfast sandwich!

Bacon, Scallion Fried Egg and Cheese Breakfast Sandwich Ingredients
This to die for breakfast sandwich is made with simple, good quality ingredients, and is ready in a flash. Here's what you'll need to make them:
- Bacon. Use your favorite, good quality bacon for this recipe.
- Lots of freshly ground black pepper. You'll season the bacon as it cooks, as well as the fried eggs for lots of nice, peppery bite!
- "Jewish rolls" or Challah Rolls (i've seen them called both at my local grocery store). I love these rolls for breakfast sandwiches, but you can use any sturdy rolls you like. You want something soft, but sturdy enough to hold up to the sandwich ingredients.
- Butter, for toasting rolls. I like to use a good quality, salted butter like Kerrygold for this sandwich.
- Large eggs.
- Scallions, very thinly sliced. Slicing the scallions (aka green onions) is key to this recipe, so they blend perfectly into the eggs and stream.
- Sliced American cheese. It's the perfect melty cheese for these sandwiches.
- A clove of fresh garlic, minced.
- Mayonnaise. You'll stir the garlic into the mayo and spread on the bottom of the toasted buns for an extra flavor boost to the breakfast sandwiches! Mayo might sound odd for a breakfast sandwich, but TRUST ME, it makes the sandwich.

How to make the sandwich
This amazingly delicious and flavorful breakfast sandwich takes less than 20 minutes to make! Here's how to do it:
- Split the rolls with a serrated knife, and spread softened butter evenly over the cut side on both sides.
- Set rolls butter side down in a cold nonstick skillet, and heat over medium heat.
- Toast rolls, 3-5 minutes, checking every once in a while, until rolls are toasted inside. Repeat with both rolls, then set aside.
- Add bacon to same pan and cook until crisp- sprinkle generously with freshly ground black pepper as it cooks. Drain on paper towels.
- While bacon cooks, Mix mayo and garlic in a small bowl. Set aside or refrigerate until ready to use.
- Slice scallions very thinly and set aside.
- Once bacon is cooked and draining, allow pan to cool off of the heat until no longer smoking.
- Once pan is cool, add eggs and set heat over low heat.
- Once eggs begin to set (about 1-2 minutes), sprinkle scallions evenly over both eggs, and season with salt and pepper. Top each egg with a slice of cheddar and cover pan with a lid.
- Cook until cheese is melted, about 1-2 minutes.
- Spread garlic mayo on the bottom inside of the buns, then add cheesy scallion eggs and bacon, top sandwich, and serve! (see recipe card below for full details and ingredients list).






Substitutions and Additions
This Scallion Fried Egg Bacon Egg and Cheese Sandwich is easily adapted to suit your tastes, as well as work with what you have on hand. Here are some great substitutions and additions you can use to make the sandwich your own!
- If you're trying to lighten things up, you could try turkey bacon in place of the regular bacon. If doing so, be sure to add some butter to the pan before preparing your eggs.
- Instead of Challah rolls, you could use english muffins or a classic kaiser roll. The best type of roll is one that is structurally sound without being too bready so it doesn't take over the sandwich. You could also use sturdy brad like sourdough, and spad butter on one side of each bread slice.
- Add a little hot sauce just before serving for a little kick!

What to serve with the Bacon Egg and Cheese Sandwich
These breakfast sandwiches are great alone, or with a side of hash browns or home fries. Add a little splash of hot sauce if you like spicy! These are great with coffee, or some good Bloody Marys if brunch is your thing!
