this easy and herbal strawberry lemonade vodka drink is made with a homemade simple syrup with fresh (or frozen) strawberries, honey, and fresh thyme. Add that to fresh squeezed lemon juice and vodka, and top with some club soda for a fresh and refreshing cocktail!
The fresh berries and fresh lemon juice make for a tart lemonade, with a little extra kick from some of your favorite vodka! What truly sets this cocktail apart is the easy strawberry syrup, made with ripe strawberries, thyme sprigs, and honey (or sugar). Like a pink lemonade with an herbal twist, this delicious cocktail always hits the spot. Garnish with fresh strawberries, lemon slices and thyme sprigs to make the drink extra festive!
Ingredients:
To make this delightful Strawberry Thyme Vodka Lemonade Cocktail, you will need:
- Strawberries. You can use fresh strawberries or frozen to make the syrup!
- Fresh Thyme sprigs, for subtle herby flavor. These will cook with the strawberries in the simple syrup.
- Honey. If you don't have honey, you can use sugar to make the simple syrup instead.
- Your favorite plain vodka. In a pinch, blanco tequila will work too!
- Some fresh lemons
- Plenty of ice. Crushed ice is great if you have it!
- Club soda, or sparkling water, to top the cocktails.
How to make the Strawberry Thyme Vodka Lemonade Cocktail
Make your Strawberry Thyme simple syrup:
In a small saucepan, bring the syrup ingredients to a boil, then reduce to medium-low, and simmer, stirring occasionally for 10 minutes. Turn off the heat, allow syrup to cool, and strain through a fine mesh sieve into a medium sized jar or airtight container, pressing fruit to make sure you get every last drop of liquid. Makes 1 cup.
Making the Strawberry Thyme Vodka Lemonade Cocktail:
- Fill 2 large glasses halfway with ice.
2. Combine vodka, lemon juice, and strawberry thyme simple syrup by stirring well, or shaking in a cocktail shaker.
3. Fill each glass halfway with strawberry lemonade and vodka mixture, and top with club soda.
4. Garnish with strawberries, thyme sprigs and lemon slices.
Substitutions and Variations
- Try blackberries or raspberries in place of the strawberries.
- Use sugar instead of honey for the simple syrup.
- Use agave nectar as your sweetener instead of honey or sugar.
- Swap the thyme for fresh mint.
- Amp up the strawbery flavor and add fresh strawberry puree.
- Try blanco tequila instead of vodka!
Make ahead for a crowd
If you'd like to make a big batch of this cocktail, I would recommend making about 4 times the amount of syrup, and quadrupling the amount of all other ingredients. Mix well in a large pitcher, and add the club soda to each glass when serving.

- 6 sprigs fresh thyme
- ½ cup honey
- ¾ cup water

- 4 oz vodka
- ice
- club soda

*Notes/Substitutions:
While this recipe calls for strawberries, you could use an equal portion of raspberries or blackberries- and this would still be delicious.
If you don't have honey on hand, you could use an equal portion of sugar or agave syrup.
