Ingredients

  • 2 tablespoon olive oil
  • 2 bone in, skin on chicken leg quarters 
  • 2 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 1 teaspoon dry mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon powdered chicken bouillon
  • ½ teaspoon coarse sea salt 
  • ½ teaspoon freshly ground black pepper 

Instructions

  • Pat chicken dry with paper towels.
  • Mix all spices together well, then whisk in olive oil to form a spice paste.
  • Brush both sides of the chicken well with the spice blend, being sure not to leave any large clumps of seasoning on the chicken, as they can burn. (At this point, you can place the chicken in a ziplock bag and refrigerate for up to 24 hours, or cook immediately. The longer the seasoning stays on the chicken, the more flavorful it will be.)
  • Place chicken in air fryer skin side down, and air fry at 380 degrees for 15 minutes. Start cooking the chicken in a cold air fryer- do not preheat.
  • After 15 minutes, flip chicken over, and cook 10-15 minutes more. Cooking time may vary depend on the size of your chicken quarters. Cook until the chicken registers 165° at the thickest point of the thigh.

Notes

  • Start in a cold air fryer. Place the chicken skin side down in a cold air fryer to help render the fat and create extra crispy skin.
  • Cook to temperature. Chicken leg quarters vary in size, so cook until the thickest part of the thigh reaches 165°F with an instant-read thermometer.
  • Don't overcrowd the basket. Leave a little space between each piece so the hot air can circulate and crisp the skin evenly. Cook in batches if needed.
  • Marinate for more flavor. The seasoned chicken can be refrigerated for up to 24 hours before cooking for even deeper flavor.
  • Rest before serving. Let the chicken rest for 5–10 minutes before serving to keep it juicy.
