- 4 strips bacon, cooked and chopped
- 1 medium/large ripe avocado
- 2 tablespoon feta cheese, crumbled
- 2 scallions, sliced
- 2 slices bread, toasted
- bottled balsamic glaze, for finishing
- salt, pepper, and garlic powder to taste
- sunflower seeds for garnish optional
Cook your bacon the way you normally would. I prefer to cook mine on the stovetop, starting by laying the bacon in a cold nonstick frying pan, and frying over low heat- flipping frequently with tongs until just crisp, then draining on paper towel.
While your bacon cooks, toast 2 slices of sourdough bread and set on serving plates. You can either butter them and toast in a pan, or use the toaster.
Open your avocado, remove the skin and pit, and place on a cutting board. Sprinkle with salt, pepper and garlic powder. Mash with a fork. Thinly slice white and green parts of scallions.
Once bacon is cooked and cooled slightly, chop it into small bite size pieces.
Spread out the mashed and seasoned avocado evenly onto 2 slices of toasted bread.
Top each avocado toast equally with the chopped bacon, scallions, and feta crumbles. Drizzle the top of each toast with balsamic glaze and enjoy!
- Bread: Use a sturdy bread such as sourdough, Italian, multigrain, or rye so it holds up to the toppings.
- Avocado: Use a ripe avocado and mash it just before assembling for the best color and texture.
- Extra-crispy toast: Lightly butter both sides of the bread and toast in a skillet until golden.
- Add an egg: Top with a fried or poached egg for a heartier breakfast.
- Make it vegetarian: Simply omit the bacon.
- Serving: Avocado toast is best assembled and eaten immediately so the bread stays crisp.
