Sausage Breakfast Taquitos Recipe

An easy breakfast you can make any day of the week, these Sausage Breakfast Taquitos with Sriracha Ketchup can be made in the air fryer or the oven. Use your favorite sausage, a quick egg scramble and in less than 15 minutes, breakfast is served!

Ingredients

  • 2 tablespoon olive oil 
  • 12 links fully cooked breakfast sausage (chicken or pork)
  • 2 scallions, thinly sliced
  • 4 eggs, beaten 
  • 1 cup frozen chopped spinach 
  • salt and pepper, to taste 
  • 12 small white or yellow corn tortillas 
  • 12 slices sharp cheddar cheese 

Sriracha ketchup

  • ½ cup ketchup
  • 1 tablespoon sriracha

Instructions

  • Taquitos:
    1. Heat 1 tablespoon olive oil over medium high heat
    2. Add cooked sausage and brown on both sides 2-3 minutes a side. If using raw sausage, boil first, then brown.
    3. Set browned sausage aside to cool.
    4. Wipe pan clean with a damp paper towel, add remaining oil, and heat over medium heat.
    5. Add spinach and scallions to the pan, and season with salt and pepper. Cook 3-5 minutes, until white parts of onions are softened.
    6. Add eggs and cook, stirring frequently until set;, 2-3 minutes.
    7. Place tortillas on a plate, and cover with a damp paper towel. Microwave on high 1 minute until they are soft and pliable.
    8. Add a slice of cheese to each tortilla, 1 sausage link, and about 2 tablespoon of the egg mixture. Roll and seal, leave seam side down.
    9. Work in batches and covering tortillas to keep warm.
    To Air Fry:
    1. Place seam side down in your air fryer and spray with tops of taquitos with cooking spray.
    2. Air fry 10-12 minutes at 400 degrees, until borrowed and crispy,
    To Bake:
    1. Bake 12-15 minutes at 425 degrees on a foil-lined baking sheet sprayed with cooking spray, until browned, on top rack of oven. As above, spray tops of taquitos as well before baking.
