Easy and delicious Spinach Scrambled Eggs!
These green eggs are a great way to enjoy a healthy breakfast in a hurry! This easy egg scramble recipe combines fruity and flavorful Aleppo pepper, garlic, fresh spinach, and nutty parmesan for a fast and delicious scramble you can enjoy any day of the week!
These spiced spinach eggs are a great quick breakfast for busy weekdays or relaxing weekend brunch, and go great with simple buttered toast for a breakfast the whole family! You've gotta love an easy way to make delicious scrambled eggs!

Spiced Spinach Scrambled Eggs recipe ingredients
These
- 4 large eggs.
- Dried, crushed Aleppo pepper. This adds a bright, floral, and slightly spicy note to the eggs.
- Fresh grated Parmesan cheese.
- Fresh spinach leaves. You can use regular or fresh baby spinach.
- A couple cloves of garlic.
- Good quality butter, such as Kerrygold.
- 1 scallion (aka green onion), thinly sliced.
- Kosher salt and freshly ground black pepper.

How to make the eggs
- Whisk together eggs, Aleppo pepper, and parmesan in a small bowl.
- Add butter to a medium nonstick skillet over medium heat, and melt.
- Add scallion, and cook until softened, stirring occasionally, 2-3 minutes.
- Add spinach season with salt and pepper, and cook until wilted, 2-3 minutes. S
- Add garlic and cook until liquid is mostly evaporated from spinach, 1-2 minutes.
- Pour the whisked eggs mixture into the pan.
- Cook, stirring occasionally, until eggs are set to desired doneness 2-3 minutes.
- Remove from heat, and top with an additional sprinkle of Aleppo pepper and parmesan. Enjoy! (see recipe card below for full directions and ingredients list).








What is Aleppo Pepper?
Aleppo pepper is a moderately spicy and fruity pepper, usually sold as crushed flakes, with a mild cumin-like flavor profile. It has a slow building heat, with a fruity, raisin like flavor. It add depth, a touch of heat, and a bright quality to dishes, like these spiced scrambled eggs!

Substitutions and Additions:
This spinach scrambled eggs recipe is easily adapted to work with what you have on hand in your refrigerator and pantry, as well as your personal tastes. Here are some great swaps and additions you can use to make this recipe your own!
- Use frozen chopped spinach in place of the fresh spinach. Just be sure to cook until all liquid is evaporated. You can also use baby spinach leaves,.
- Try all egg whites in place of the whole eggs.
- Swap the parmesan cheese for feta cheese. You could also try cheddar cheese or pepper jack!
- Use olive oil or avocado oil instead of butter.
- Swap the Aleppo pepper for crushed red pepper flakes. If using crushed red pepper flakes, i recommend cutting back, since they are a bit spicier.
- Want more fresh veggies? Add some thinly sliced red peppers (bell peppers) and sweet onion to the mix! Just be sure to cook them down before adding the scallions, spinach and garlic.
