One of the best and most practical viral tiktok recipes, this avocado toast is loaded with flavor, and super simple to make. While grating eggs with a microplane grater may seem a little off the beaten path in terms of egg preparations, it's actually an eggcellent idea. It breaks up the monotony of boring fried or hard boiled eggs, and lends a light, almost egg salad quality to the toast.
My new favorite avocado toast
The light and airy grated hardboiled egg and avocado are perfectly balanced with a bit of spiced up Kewpie mayonaise, and a touch of spicy sriracha sauce. I tried this once, and I was hooked. It's now one of my go-to breakfasts! It may be the best avocado toast I've ever had. If nothing else, it's definitely a fun way to spice up your breakfast routine.
Ingredients
To make the avocado toast, you will need:
- 1 hard boiled egg. I like to bring mine to a simmer, then cook for about 10 minutes. I then transfer them to an ice bath to cool completely before peeling.
- A ripe avocado, thinly sliced.
- Salted butter, softened. You'll need enough to apply a good coating to both sides of your bread of choice.
- 1-2 slices crusty bread, such as sourdough or rustic whole grain. How may slices will depend on the size of your bread. One avocado can cover 1 large slice, or 2 smaller slices.
- Kewpie Mayonaise. You can use any mayo you like, but like the TikTok, I highly recommend Kewpie. Kewpie is a Japanese mayonnaise that is made with no added sugar, and only the egg yolks. It's a tangy, creamy and flavorful mayo, and it's also my favorite mayo of all time. I was not a mayo person before Kewpie. It has changed me.
- Fresh grated lime zest, and some garlic powder. I like to stir in with the Kewpie mayo for a little extra burst of flavor.
- Salt and black pepper to taste, for seasoning the avocado. Avocado is soooo much better with some salt.
- A pinch of black or white sesame seeds (optional). You could also do some red pepper flakes for a bit of extra kick.
- A drizzle of sriracha sauce. prefer to drizzle it on rather than dot it in the center, but do you.
How to make Grated Egg Avocado Toast
- Spread softened butter evenly over bread on both sides,
- Add to a nonstick frying pan or skillet, and heat over medium heat for 3-4 minutes a side, until golden brown.
- In a small bowl, combine mayonnaise, lime zest, and garlic powder.
- Place toasted bread on a plate, and spread a thin layer of the mayo mixture over each bread slice
- Layer sliced avocado over toast(s), and season with salt and black pepper.
- Using a microplane or handheld or box grater, finely grate egg evenly over toast(s).
- Top with a sprinkle of black or white sesame seeds, and a drizzle of sriracha sauce.
Making the spiced-up mayo
This step is optional, but I love to add a bit of fresh lime zest and garlic powder to the mayonnaise before adding to the toasts. It adds a little extra zing to the overall avocado toast.
How to grate the hard boiled eggs
To grate the egg, you want to use a fine microplane grater, a handheld cheese grater, or the fine area of a box grater. Be gentle when grating to ensure you get light, airy pieces of egg.
