Did you ever have a cocktail so good, it just sticks with you, and you think of it time to time?
That's how I felt about a speciality infused cocktail I had years ago at a restaurant with friends. It was a relatively simple drink, but the flavor was very unique. I asked our waitress about the drink, and she told me they infused the tequila over time with pineapples and spices.
I don't get to that restaurant often, but I think of that drink plenty. So I decided to take a stab at making a similar infusion with some silver tequila, fresh pienapple, vanilla bean and cinnamon. The result was a near identical blend that I couldn't wait to make some boozy concoctions with.
Making the pienapple and spice infused tequila
All you need to do to infuse the tequila is add some fresh chopped pineapple, a cinnamon stick and a half of a split vanilla bean to a mason jar, and cover it with tequila. Shake it, pop it in the fridge and check on it every few days. In 5-7 days, you will have a delicious blend that would be great just poured over ice.
I, however, like to use it to make my Tropical Thunder Pineapple Cinnamon Paloma or Boozy Tequila Dole Whip with Whipped Cream! Both are equally delicious ways to use the sweet and aromatic tequila.

Pineapple Cinnamon Infused Tequila
Ingredients
- 1 cup fresh pineapple, cut into small cubes
- ½ vanilla bean, split
- 1 cinnamon stick
- 1 cup silver/blanco tequila
Instructions
- Add all ingredients to a 16 oz mason jar or airtight container. 2. Shake well, and place in the refrigerator for 5-7 days. 3. Every few days, try the jar to help distribute the flavors. Taste after 5 days- if looking for a more pronounced cinnamon flavor, go the full 7 days. 4. Once ready to use, strain the tequila and discard the cinnamon stick, vanilla bean and pienapple. To make a larger batch, simply double, triple, quadruple.. the recipe.

Ok, I had to try this. I just put the mixture in the fridge tonight. I will let you know how it turned out. Question, how long can you store the infused mixture once you remove the pineapple, vanilla and cinnamon?
