Easy and delicious Cinnamon and Pineapple Palomas
Smooth, spicy and oh-so-easy to drink- there's a storm a comin' when you start drinking these delicious Tropical Thunder Pineapple Cinnamon Palomas. While these are DANGEROUSLY easy to polish off, they are super simple to make- which I guess is a good thing, and a bad thing. But I digress- YOLO!
These non-traditional Paloma cocktails are made with Pineapple Cinnamon Infused Tequila, pineapple juice, fresh lime juice and agave nectar. The cocktails are then garnished with a cinnamon sugar rim, and a pienapple leaf. They are incredibly simple to make, and the infused tequila and cocktails can easily be doubled, tripled, etc to accommodate more guests.

Shake, Spritz, Salute!
Once you've got a batch of Pineapple Cinnamon Infused Tequila ready to go, all you need to do is add it to a shaker or mason jar with the remaining cocktail ingredients, shake well, pour over ice and top with a bit of sparkling water. If you are doing the (highly recommended) cinnamon sugar rim, you'll want to rim the glasses before filling with ice, and delicious booze.
How many drinks does the recipe make?
This recipe yields 2 drinks, but as I mentioned before- the tequila and the cocktail are easy to increase, depending on your party. You could also make up a pitcher of the cocktail in advance, and let guests top off their cocktails with sparkling water, if desired.
Garnishing the pineapple Paloma
I love to garnish these cocktails with a pineapple leaf, because they are so pretty- but you could go sans-garnish, or even garnish the glasses with wedges of fresh pineapple or lime.

Tropical Thunder Pineapple Cinnamon Paloma
Equipment
- cocktail shaker or mason jar
Ingredients
- 1 ¼ cups pineapple juice
- the juice of 2 limes
- 3 oz Pineapple Cinnamon Infused tequila*
- sparkling water
- 1.5 oz blue agave syrup
Cinnamon Sugar (for rim)
- 1 tablespoon sugar
- ½ teaspoon ground cinnamon
Instructions
- Add pienapple juice, lime juice, infused tequila, and agave syrup to a shaker- fid with lid and shake well. 2. Stir the cinnamon and sugar together and distribute on a plate. Moisten the rims of 2 8 oz cocktail glasses with a lime wedge, and dip into the cinnamon sugar to form a rim. 3. Fill the glasses with ice, and pour mixture evenly into both glasses. Top each cocktail with sparkling water, and garnish with pienapple leaves. Cheers!
