What is Sazón Seasoning?
Sazón is essentially a seasoning salt (sold in small packets and large containers), and primarily used in Hispanic cooking. A delicious blend of spices, it includes garlic powder, cilantro, paprika, cumin, achiote, saffron, coriander and peppers.
In this creamy chicken salad, Sazón gives the dressing a savory, mildly smoky flavor and a signature orange hue, so the sandwiches taste more seasoned and vibrant than a traditional chicken salad- all with one seasoning blend!
Note: Because Sazón is already salty, be sure to mix the salad first before adding any extra salt. If your chicken is already seasoned, start with a little less Sazón and adjust to taste to keep the salad from getting overly salty.
Other Uses for Sazón: Aside from this Chicken Salad, I also like to season meat with Sazón, as well as add it to fajitas, quesadillas and enchiladas for a burst of flavor. It's a very versatile spice, and seems to bless everything it touches.

Why This Sazón Chicken Salad Makes the Best Sandwiches

This chicken salad has a flavor profile all its own, thanks entirely to the magical little Goya spice packets. The Sazón blend of coriander, saffron, achiote, garlic and more give this easy lunch/brunch/dinner recipe a zesty, herbaliciousness that's hard to even put your finger on- you just have to try it!
Adding mayo keeps the chicken creamy, while the celery and scallions add crunch, and the little bit of apple cider vinegar cuts through the richness, so each bite is bright and not heavy. This chicken salad is sturdy enough to pile onto sandwich bread or rolls without getting soggy.

Chicken Salad Ingredient Notes
Cooked chicken. Rotisserie chicken, baked chicken breast, poached chicken, or canned chicken all work well for this chicken salad. Be sure to chop or shred the chicken small enough so the salad holds together on the sandwiches.
Sazón seasoning. This gives the chicken salad its bold flavor and orange color. You can buy packets or larger containers of the seasoning at most grocery stores, usually located in the International section.
Mayonnaise. Mayo works as the binder that holds the salad together, and gives it its creamy texture. Use your favorite brand.
Celery and scallions. These light chopped veggies add crunch and freshness to the chicken salad.
Apple cider vinegar. Just a tiny splash brightens the creamy dressing, and cuts through the richness for a perfectly balanced chicken salad.

How to Make Sazón Chicken Salad Sandwiches
Prep. Chop or shred cooked chicken into bite-size pieces. If cooking the chicken for the chicken salad, allow it to cool completely before mixing with the other ingredients.
Combine. Add the chicken, Sazón, celery, scallions, mayo, and apple cider vinegar to a bowl, and stir well until all chicken is evenly coated. Taste, and adjust to with a bit more mayo if needed for extra creaminess.
Eat! Pile onto sandwich bread or rolls, or serve in lettuce wraps.


Best Bread and Toppings for Chicken Salad Sandwiches
This Sazón chicken salad works well on your favorite sandwich bread, sourdough toast, buttery brioche rolls, croissants, or whole grain seeded bread.
Keep the toppings simple and add crisp lettuce and or a slice of juicy tomato, or add crunchy pickles for a tangy crunch.
For a lighter option, spoon the chicken salad into romaine leaves, or use to fill lettuce cups or wraps.

Substitutions and Variations
| Chicken | Use baked chicken breast, poached chicken, leftover rotisserie chicken, or drained canned chicken. |
| Mayo | Add a little extra mayo for a creamier sandwich filling, or swap the mayo for Greek Yogurt or light mayo. |
| Onion | Swap the scallions for finely diced red onion if you want a sharper bite of onion flavor. |
Serving: Serve the chicken salad on sandwich rolls, bread, crackers, over greens, or in lettuce wraps.
Sazón Chicken Salad Sandwich Recipe
Ingredients
- 2 cups cooked chicken breast, cubed or shredded
- 2 packets Goya Sazon seasoning
- 2 ribs celery with leaves, finely chopped
- 4 scallions, thinly sliced
- ½ cup mayonaise , (plus more to taste, if desired)
- 1 teaspoon apple cider vinegar
- bread, rolls, or lettuce wraps, for serving
Instructions
- Combine cooled cooked chicken, Sazón seasoning, chopped celery, sliced scallions, mayo, and apple cider vinegar in a medium bowl and mix well. Taste and adjust mayo as needed for a creamier sandwich filling. Pile onto bread or sandwich rolls with optional lettuce and tomato, or serve as lettuce wraps!

Make Ahead and Storage
Store Sazón Chicken Salad in an airtight container in the fridge for 3 to 4 days, depending on how fresh your chicken was when you made the salad. Give it a quick stir before serving, and add it to bread or rolls right before eating to keep the sandwich from getting soggy.
I do not recommend freezing this chicken salad because the mayo-based dressing can separate if frozen.
