Easy and delicious Slow Cooker Pork Sirloin Roast with Potatoes
This super simple Crock Pot Pork is a great set it and forget it meal you can make in the slow cooker with minimal prep time. The lean and tender pork is coated in a delicious herb butter, then cooked to perfection on a bed of red bliss potatoes.
Once the delicious pork sirloin roast and potatoes are cooked through, the flavorful cooking liquid is turned into a tasty gravy by adding a quick and easy slurry as the pork rests before it's sliced!
This homestyle meal is a family favorite, and goes great alongside a simple vegetable or side salad, for a no-fuss beautiful pork roast everyone will enjoy!

Crockpot Pork Sirloin Tip Roast Recipe Ingredients
This easy Slow Cooked Pork comes together quickly and easily, and cooks entirely in the crock pot! Here's what you'll need to make it:
- 2 lb boneless pork sirloin roast. Unlike a pork butt, the pork sirloin roast is very lean, so it is important to cook it for much less time, and ideally, until the center just reaches 145 degrees f for maximum tenderness and texture.
- 2 sprigs fresh rosemary, finely chopped.
- Fresh garlic, minced.
- 1 stick butter, softened.
- Chicken stock or chicken broth.
- Balsamic vinegar.
- Coarse kosher salt and freshly ground black pepper.
- Red potatoes.
- A small onion, thinly sliced.
- Cornstarch and water, to make a slurry to make the pan drippings into gravy!

How to make the Pork Sirloin Tip Roast Recipe in the Slow Cooker
With only about 10 minutes of prep, this pork cooks start to finish in the Slow Cooker, for an easy dinner you can make in a flash! Here's how to make it:
- Add stock, balsamic, potatoes and onions to the crockpot, and toss to coat.
- Mix softened butter with rosemary and garlic in a small bowl.
- Pat pork dry with paper towels.
- Coat pork in butter mixture, then season on all sides with salt and pepper.
- Place pork on top of potatoes and cover.
- Cook on high for 2-2.5 hours, or until roast reaches 145 degrees. Alternatively, you can cook on low for 4-5 hours. Cooking time can vary, so be sure to periodlically check your pork's temperature for doneness.
- Once pork reaches an internal temperature of 145 degrees f with a meat thermometer (or instant-read thermometer) inserted in the center, remove it to a cutting board, and allow it to rest for 10 minutes, then slice. (If you like, you can tent the roast with aluminum foil).
- While the meat rests, taste potatoes for seasoning, and add salt as needed.
- Make a slurry of 2 tablespoon cornstarch and 2 tablespoon water, whisk well until no lumps are present, and stir into the potatoes to make a gravy. (see recipe card below for full instructions on slow cooking).





Serving the Pork Roast
This easy Crockpot meal its great as is, with some of your favorite veggies as a side dish, like green beans or steamed broccoli. You could also use this lean pork sirloin tip roast sliced thinly for pork the next day for sandwiches, and use the flavorful gravy as well! Boneless pork loin roast is very lean, so be sure to slice rather than shred the pork.

Substitutions and Additions
- If you want to cut back on the butter, you can do half butter and half olive oil mixed with the rosemary and garlic to coat the pork in.
- For a quick and easy option, you can do 2 teaspoon garlic powder in place of the fresh garlic, or a mixture of garlic powder and onion powder.
- If using dried rosemary, use 1-2 tsp.
- You can substitute Yukon gold potatoes for the red bliss potatoes!
- For a little extra tang in the gravy/sauce, add a ½ tablespoon dijon mustard.
- If you can't find a pork sirloin tip roast at your grocery store, you could also use a large pork tenderloin. Just be sure the periodically check it's temperature so it does not overcook.
- For extra flavor, you can add a sprig of rosemary to the potatoes and cooking liquid as well.
Storing leftovers
Store any leftover pork, potatoes and gravy in an airtight container in the refrigerator for 3-4 days. Leftover pork can be reheated with the gravy and potatoes on low in a saucepan until just warmed through.
