Ready in about 15 minutes, this super flavorful egg toast is first buttered and crisped in the pan, then topped with deliciously herby and cheesy feta and chive scrambled eggs, and topped off with bright, fresh dill!
This egg on toast is a great easy weekday breakfast to get you going during the week, and is equally satisfying as a relaxed weekend brunch!

Feta, Dill and Chive Egg on Toast recipe ingredients
- Sourdough bread or bread of choice. I like to use a sturdy bread so it really holds up to the eggs. Something like rye or bakery whole grain bread would also work well!
- Softened butter. You'll spread the butter evenly on both sides of your bread and toast right in the pan for ultra crunchy, butter and delicious toast! Good bread is key here.
- Chopped fresh chives.
- Crumbled feta cheese.
- Large eggs.
- Fresh dill for garnishing the finished toasts.
- Tobacco sauce or similar hot sauce, such as Crystal, for flavoring the eggs.
- Salt and black pepper, to taste.

How to make Herbed Feta Eggs on Toast
- Spread half the butter on both sides of each slice of bread until evenly coated. Go all the way to the edges of the bread to get it crispy all around!
- Heat a large nonstick frying pan over medium heat, and add the bread slices. Toast for 3-5 minutes a side, rotating until both sides are golden brown and crisp. Set aside on a plate, and wipe the pan clean of any crumbs.
- Add the eggs to a small bowl, and whisk together with hot sauce.
- Melt remaining butter (or add more if needed) in the pan over medium-low heat, and add eggs to the pan.
- Stir eggs a bit until just starting to set, then add the feta cheese and chives and cook on medium-low heat, stirring frequently, for 2-3 minutes, until the eggs are cooked through and set, and feta and chives are well incorporated. Cooking time may vary depending on desired doneness.
- Arrange egg mixture on toast, and top with freshly ground pepper, salt and fresh dill. (See full recipe below for details and ingredients list).






What to serve with the toasts
These tasty eggs on toast make a great simple breakfast all by themselves, but also go great alongside some bacon, turkey bacon or sausage. You could also add some hash browns, too, if that's your thing! And for me, coffee is a must!

Substitutions and Additions
This Herby Egg on Toast can be easily adapted to work with your tastes, and what you have on hand. Here's some great swaps and additions you can use to make this recipe your own!
- Try other delicate fresh herbs, like tarragon, parsley or cilantro!
- Rather a runny yolk fried egg situation? Top your jammy eggs with feta and dill, add a splash of cold water and cover with a lid until just set, then add to your toasts! A runny egg yolk is always a good idea!
- Save time and make your toasted bread in the air fryer, or toaster oven instead of the pan!
- Try a sturdy rye bread or whole wheat in place of the sourdough.
- Add some red pepper flakes just before serving for a little kick.
- Swap the chives for VERY thinly sliced scallions. These eggs cook fast!
- Swap the eggs for egg whites only.
- Brush your bread with olive oil instead of butter.
