Why this one pan method works
Just the right amount of liquid. This recipe uses a specific ratio of liquids to both cook the noodles, and create a delicious sauce, all at the same time!
Low Heat. Cooking the noodles over low heat in the broth and milk mixture releases starch from the pasta, which naturally thickens the sauce, with a little help from a small amount of flour.
Stir to Prevent Splitting. Keep your heat low and stir occasionally to prevent splitting, and stir in the sour cream at the end off heat.

Ingredient Notes
Ground beef. I go for lean 90/10 for this recipe. Using lean ground beef cuts down on excess fat, and the creamy sauce keeps everything nice and moist. For alternative meat options for this ground beef stroganoff, see chart below.
Egg noodles. These are the classic pasta used to make stroganoff, and one of my personal favorites. If you like, you can substitute with another small shape pasta, such as rotini, or gluten free pasta.
Milk and Beef broth. This combo is the base of the sauce, and cooks the noodles as well. You can use whole milk or 2% milk for this recipe.
Cream of Mushroom Soup. This adds some depth, thickness, mushroom flavor, and an ultra creamy texture to the sauce. You'll stir this in with the other liquids before adding the noodles to give the sauce some nice body and richness.
Smoked paprika, Worcestershire sauce (Lea and Perrins recommended), and Dijon mustard. This trio gives big flavor to the sauce, adding a smoky and rich depth, and a tangy flavor from the mustard.
Sour cream. This gets stirred in at the very end, to give the dish that tangy Stroganoff flavor. I prefer full fat sour cream for this recipe.

Variations & Substitutions
| Protein | Use ground turkey or ground bison for a lighter version. You can also use ground beef with a higher fat content (such as 80/20), just be sure to drain off any excess grease before adding the spices and flour. |
| Pasta | If you don't have wide egg noodles, you can substitute a different pasta, such as elbow noodles or fusilli. You can also use gluten free pasta, such as Banza Chickpea Pasta. |
| Cooking Liquid | You can swap the beef broth for chicken broth or chicken stock, and use 2%, whole, or evaporated milk for this recipe. |
| Sour Cream Swaps | In place of the full fat sour cream, you can use light sour cream, or Greek yogurt. |
| Extra Mushroom Flavor | For even more mushroom flavor and bite, add 8 oz of thinly sliced mushrooms, and cook before adding the onions until softened, about 6-8 minutes with a little additional butter or a bit of olive oil. Cremini or button mushrooms are both great options. |
Beef Stroganoff Hamburger Helper (One-Pot) Recipe
Equipment
- 12" cast iron skillet or deep saute pan
Ingredients
- 2 tablespoon butter
- 1 medium onion, diced
- 1 lb lean ground beef
- 1 tablespoon tomato paste
- 4 cloves garlic, minced
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- 2 tablespoon all-purpose flour
- 4 cups dry egg noodles
- 1 ½ cups milk (2% or whole milk recommended)
- 2 cups beef broth or beef stock
- 1 10.5 oz can Cream of mushroom soup
- 2 teaspoon Worcestershire sauce
- 2 teaspoon Dijon mustard
- ½ cup sour cream (at room temperature)
- 1 teaspoon sugar (optional)
Instructions
- In a large deep sauté pan or cast iron skillet, melt butter over medium heat. 2. Add diced onion and cook, stirring occasionally, until translucent, 5 minutes. 3. Add ground beef and cook, breaking up as you go until browned, 4-5 minutes. 4. Add tomato paste and garlic, stir well into meat mixture, and cook, stirring occasionally for 2-3 minutes until tomato paste is slightly deepened in color. 5. Add smoked paprika, salt, sugar (if using), pepper, and flour, and stir until well combined. Cook 1 minute. 6. Slowly whisk in beef broth, then add milk, dijon, Worcestershire sauce, and cream of mushroom soup and stir well until homogenous. 7. Add noodles, stir to combine, and bring to a boil over high heat. 8. Once boiling - reduce heat to medium-low and simmer until pasta is cooked through, stirring occasionally to avoid sticking and splitting, 10-12 minutes, until noodles are just tender and the sauce lightly coats the back of a spoon. 9. Remove from heat and stir in the sour cream. 10. Serve hot with fresh chopped parsley, if desired.

| Veggies | Serve with a light and easy veggie side, like Garlicky Broccolini, Oven Roasted Asparagus, Air Fryer Squash, or Air Fryer Baby Carrots. |

| Bread | Add a side of crusty Italian bread or garlic bread! |

Storage, Freezing & Reheating
Refrigerator. Store any leftover cooled Stroganoff in the refrigerator for up to 4 days in an airtight container. It's even better the next day, and is great for leftovers or an easy office lunch! Freezing is not recommended for this recipe.
Reheating. To reheat, warm on low heat with a bit of water, milk, or broth to loosen up the sauce in a saucepan, or microwave in 30 second intervals, stirring, until desired temperature is reached.

FAQ (Frequently Asked Questions)
Can I use Greek yogurt in place of sour cream?
Yes you can! Use equal parts Greek yogurt or light sour cream in place of the full fat sour cream.
How do I keep my milk from curdling while cooking?
To keep your milk from separating while making this ground beef stroganoff, be sure to stir every few minutes, and keep your heat low. Add room temperature sour cream off heat to help it meld easily into the sauce.
