Easy weeknight Air Fryer Squash and Zucchini!
This easy Air Fryer Roasted Zucchini and Yellow Squash recipe is the perfect way to make a healthy veggie dish on a weeknight, with only a handful of ingredients in way less time (and less hot) than using an oven!
With a little prep work, you can make this zucchini squash simple side dish in just 15 minutes! All you need is some zucchini and fresh yellow squash, a few spices, and parmesan cheese (a game changer for crisp, flavorful air fryer summer squash).
The simple cooking method enhances the mild flavor of the fresh produce, and is my favorite way to use home grown or farmer’s market summer squash!
This simple squash recipe is a great healthy side dish for any night of the week, and an easy and healthy way to make a complete meal feel fresh and satisfying!

Ingredients
Here's what you'll need to make this simple Air Fryer Squash and Zucchini recipe:
- 2 medium sized fresh zucchini.
- 1 yellow squash (medium sized).
- Extra virgin olive oil. You could also use avocado oil.
- Grated Parmesan cheese. This will. go onto the veggies before air frying, as well as at the end for an extra burst of flavor!
- Garlic powder, Italian seasoning, and crushed red pepper flakes.
- Salt and freshly ground black pepper.

How to make Air Fryer Squash and Zucchini
Here's how to make this easy Air Fryer recipe for Roasted Squash and Zucchini in juts 15 minutes, all in the Air Fryer!
- Cut squash and zucchini into bite size pieces (I like to do a roll cut- see recipe card for notes).
- Toss the cut squash and zucchini in a large bowl with olive oil, ½ of the parmesan (reserve other half for serving), garlic powder, Italian seasoning, red pepper flakes, and salt and pepper util well coated.
- Transfer to the air fryer basket in a single layer (a bit of overlap is ok).
- Air fry at 375 degrees for 10 minutes.
- Toss basket or gently, or stir with a spatula.
- Cook 3-4 minutes more at 375 degrees, until tops are golden brown.
- Remove to a platter or plate, top with remaining parmesan and serve! (See recipe card below for step-by-step instructions and ingredients list).







Roll cutting the Squash and Zucchini
Roll cutting is a unique and pretty way to cut fresh veggies like squash and zucchini, and exposes more surface area of the vegetable, enabling faster cooking!
To roll cut your squash and zucchini, hold your knife at an angle away from your body and cut down on the veggies on a 45 degree angle. Roll your squash a quarter-turn, and continue cutting on the diagonal until all the squash are prepped!

Substitutions and Additions
This Air Fryer Roasted Zucchini and Yellow Squash recipe is easily adapted to work with your preferences, as well as what you have on hand in your refrigerator and pantry. Here are some great swaps and additons you can use to make this recipe your own:
- Only have one veggie? Make air fryer zucchini or air fryer squash with 3 of either vegetable!
- Swap the olive oil for avocado oil!
- Switch up your spices! Add some onion powder, or swap the Italian seasoning for some dried oregano and dried basil! You could also use finely minced fresh herbs!
- Want to make this recipe vegan? Omit the parmesan cheese, or substitute with a sprinkle of nutritional yeast!
- Not a fan of spice? Omit the crushed red pepper flakes!

Storing leftovers
Store any leftover squash in an airtight container in the refrigerator for up to 3 days.

Very quick, tasty recipe. I did add some panko coating before cooking which added a lovely crunch. I might add some chopped onions to the mix next time.
